fix: throw when violations key does not exist

Fixes #96 in a backwards compatible way.

@mtarld is there anything I could do for this to be merged and released?

I could also extend the microservice configuration so that the response code for validation violations can be configured per microservice. This way users can opt in into using ResourceValidationException if they so prefer. Please also read https://github.com/mtarld/api-platform-ms-bundle/pull/97#issuecomment-2869665241.
