New way to eval `...`, and escape \, and use `expr` foldmethod

The eval result in substitute() may contain special chars, see sub-replace-special, which may cause Vim hanging there. I have a snippet to get a URL's title and it'll fail if there is & in it.
Also, I add that \ can be escaped by \\, and update the syntax file so escaped chars get a SpecialChar highlight.
And I changed the fold method to expr.

i've tried to contact msanders few times but with no luck. also some other ppl who requested pull requests also tried to contact him. since there was no commit or comment for some time i decided to take action.
