Custom model or provider for code completion

I've seen similar issues #7052, #7337, and #7690

Basically there is a setting to change completion model:

But, I understand from the other issues mentioned, this is not supported.

There are some models tuned for code completion such as Codestral-2501 shown in my screenshot, I think it might be good for us to be able to use a custom provider? That means GitHub Copilot need to support Mistral API, as I don't think the OpenRouter one is for code completion.

Ollama might also be a good option if we run our local model, there should be something similar. This feature already exist in continue.dev
