[Documentation] Item table ItemIconColor values can override component's general theme colors.

Call out that components that render menu items (e.g., ContextMenu, CommandBar), if an ItemIconColor is set in the Items table, that value will override the general component's theme. It will even ignore other state colors (e.g., disabled).
