Documentation for MATOMO_PLUGIN_DIRS and MATOMO_PLUGIN_COPY_DIR

Kia Ora!

I'm currently doing some work getting Matomo running on Lagoon. I've come to a fairly nice setup relying on the MATOMO_PLUGIN_DIRS and MATOMO_PLUGIN_COPY_DIR env vars.

However, this doesn't seem to be particularly well documented anywhere - but it's a really neat feature that could help a lot of people deploying containerized versions of Matomo.

I'm happy to write up some docs for this if there is some appetite? I'd just need to be shown where they should live.
