[Improvement] Restore Windows e2e test

Proposal

The Windows e2e test starts failing for no reason, while the installation of Leon with the CLI on a fresh Windows 10 installation works with no problems. The automated e2e test is a false negative.

The test has been temporarily disabled in this commit: https://github.com/leon-ai/leon-cli/commit/f2053d340f100acdcbb110ef796de1853d3f2199

We need to investigate what causes the test to fail and fix it so we can enable it again.
