Updates to support capacitor v6

I want to be clear: I am not opening this PR attempting to claim this is the full changeset necessary to bring capacitor-background-runner up to Capacitor V6 support. I am just trying to get the ball rolling on #87.

I do not have any Mac devices so I have not been able to run verify:ios, I am hoping the PR workflow will run the full set of unit tests and expose any failing tests so we can keep addressing them.
