feat(cbdc-example): Add version of CBDC example to use the docker SATP gateways

This will enable to have an example more stable that is not afected with new versions of the satp-hermes package.

This should be done in this folder examples/cactus-example-cbdc-bridging, similar to the other examples. Example, use a docker compose file to load the different docker images and setup all connections
