Issuer can't overwrite values in a credential proposal when sending credential offer and issuing credential based on a credential proposal

Reopen this ticket as mentioned in #1184 after test it again, as I can't reopen the original ticket. If it's not an issue, where can I find the right doc that shows how this can be done? Only tested in V0.6.0.
