[Swift] Release 2.1.0

I would love to release 2.1.0 where we have a new feature Wasm support. I've checked the current build. Code generation should be stable, however we won't have "Verifiers/JSON encoding code gen" since flatc isn't released yet. Should I release just a minor? or should I wait for the new release of flatc?
