Outdated doc site

The documentation site, despite its URL of https://funcool.github.io/httpurr/latest/, does not document the latest version (it documents v1.1.0). This just tripped me up.

I don't know how to fix that, but in the meantime, I suggest editing the README to not point to this site, but to the doc/ folder or the cljdoc. Happy to contribute a PR doing either of those.
