Added PLoS Blog to publications

Adding PLoS Blog links to the op-ed section of the publications page. I haven't tested this locally yet so please don't approve until I comment that it's tested!

Tiny point - but should the publication be in ***, in line with others?

Fixed that, thank you Lukas! Tested and working on a local Hugo server (hugo v0.119.0) on Windows 11. This is ready to be merged if yous are happy with it 😄
