after installation via the button uninstallation has to be done manually by opening the data folder and removing the engine besides deleting it in api the stockfish 16 ui should...

only chess variant is always applied

tested with fairy-stockfish and it does not seem to perform detection just adds it for chess only edits overwrite it with chess too
