Selecting a language does not update STT model configuration

Steps-to-reproduce:

  1. Open up Settings
  2. Change language in General - need to update the overall display text too. => https://github.com/fastrepl/hyprnote/issues/195
  3. Start recording
  4. Transcript widget uses English

For now, restarting the app(cmd+q) can be a workaround.
