Update environment.yml

Specify the package version to avoid package confilic

New members encountered a problem while using "environment.yml", the problem is caused by version conflicts. So I update the environment.yml by adding the specific package number.

@LostEcho365 did you see the update in #29? Did that fix your issue?

Question for @thesps, should we specify all versions like done in this PR? Or is there a downside to being too restrictive?
