Sonic Origins

image It looks like the Sonic .bin files could be inside these .rsdk files. Has anyone tried to extract them?

I don't think any of these would contain Mega Drive ROMs/disc images, since the games have been completely recompiled both for this collection as well as the previous releases on Android/iOS.

Those files are not ROMs. They are datafiles for the Retro Engine. There are Game Gear ROMs in there now thanks to the Plus DLC, but I don't know how to extract those.

The Game Gear ROMs from Plus appear to be in the "SonicOrigins\image\x64\raw\bindata" directory. It has 14 files (12 games, 2 of which were in both Japanese and international releases), that are close to the file sizes of the ROMs seen in the Sonic Adventure DX collection. However, they are encrypted if they are the actual files.
