deps-try startup fails on Windows, if the $HOME directory contains a space

@tdutrifork my hunch is that `~/.babashka/bbin/bin/deps-try` (or Windows equivalent) contains a path with the whitespace that's causing this, probably `(def script-root "C:\Users\Tobias Dummschat\more\here"`. Try to escape that whitespace, like so(?)...

I don't see any compat-issues so this should be feasible. PR welcome!

As Ruby 2.7 is now [2 years EOL](https://www.ruby-lang.org/en/downloads/branches/), maybe a good moment to prune that version as well, WDYT @radar?

@ahorek it seems [received_parser.rb](https://github.com/mikel/mail/blob/64b5d722b3926ccf0f1e73b1131e567ba99422fc/lib/mail/parsers/received_parser.rb) was unchanged in the ragel-bitmap PR. This makes sense as the timestamps of the rl-files hadn't changed. Manually deleting `lib/mail/parsers/*.rb` and re-running `rake ragel:generate` revealed it....
