[TUTORIAL] Rewrite collection of SDK tutorials for Viem

Optimism SDK is now in maintenance mode and likely will be for a while (not shutting down the sdk yet), but we want to start sending developers to viem instead since it supports fault proofs. This means all the sdk tutorials will need to revised for viem:

Just for future reference, a good viem example of doing a deposit is here: https://github.com/wevm/viem/blob/main/examples/op-stack_deposit/index.tsx Viem has near 100% test coverage too so nearly all code examples can be copy pasted from viem
