Real Collation Support

Ignore the errors for now, I still need to add all of the character sets and collations that we use internally. Testing will come once the missing items are in as they may be covering other errors. Otherwise, I don't foresee any changes to the core addition of collation support, so let me know what you think!

Additions on top of this PR will literally just be tests (and their relevant fixes if any are required).

EDIT: Well it appears that CI doesn't run when there are conflicts 😆
