[DOC-11824] Eventing Information Architecture Rework

Currently in the process of reworking the Eventing IA. Will only merge this IA change after collecting feedback and updating the content of the Eventing pages for the upcoming release.

Updates to Eventing content for the 7.6 release will be pushed to the release/7.6 branch of the docs-devex repo.
