Add histogram to track apply mutation batch size

We have apply_duration_seconds_bucket to track apply performance, however we don't track the size of mutation batches we are upserting/deleting.

@sravotto, we have both apply_deletes_total and apply_upserts_total. Is that sufficient?

Is the main ask here to add a histogram prometheus metric and then surface it in the Grafana dash?
