Add e2e on CRC (single-node OpenShift) for PR merges

We keep breaking our OpenShift compatibility because the defaults in KIND are too permissive. I'd like to discuss adding CRC (OpenShift Sandbox) to github actions as a secondary e2e run for PR merges.
