1761 - Support for Conversation Specific Model

Description

Added the ability to set the model per chat session, similar to #1761

Additional Notes

I don't have a lot of experience with Electron and Typescript so I welcome suggestions or someone else taking over this PR.

I had issues with the dependency updates and had to start the branch from an earlier version.
