Upgrade uWebSockets to v20.14.0

With this upgrade, would it be wise to consume uWebSockets as a submodule?

I think i have some changes to the Makefile of the vendored version (plus submodules are annoying)

we do already have a submodule for prometheus tho, so I'm not opposed to it

honestly might be better to invest in cmake or something instead
