Add support for older macOS versions and Apple Silicon

I updated the app and it's not starting up anymore. After I open it, the app bounces in the bottom bar and the crashes. There are no error messages.

I'm using it Mac OS High Sierra 10.13.6 on mid 2010 Macbook pro

@VioletGray Unfortunately, after version 0.5, PDFstitcher is limited to MacOS Catalina (10.15) or newer, as that is the system used to build it. That said, I recently ran across something that might help with this, so I will make a note to look into adding support for older versions.

After banging my head against the wall for a week, I'm waving the white flag on this one. I'm keeping the issue open because it would be great to make it work, but for now I need to focus on other things.
