Update Switch design according to M3.

In the latest version of react-native-paper, the switch component is like the old school M2 design. Update the design in M3.

Totally this! I think it would be beneficial for at least the Android toggle switch to match what Material Design 3 specifies, and add the ability to use icons in the toggle switch knob. Like what Material Design 3 calls for:
