Support more fiat currencies

CoinMarketCap supports many more fiat currencies with their API. We received a request for TWD in support:

https://coinmarketcap.com/api/documentation/v1/#section/Standards-and-Conventions

To support this, we should update the fiat asset selector to more closely resemble the new crypto exchange selector, and allow for searching by name.
