Support Prometheus metrics

Is your feature request related to a problem? Please describe. It would be great to have Prometheus metrics for better visibility into the behaviour and performance of sso.

Describe the solution you'd like Add Prometheus instrumentation using the Prometheus client libraries.

Thanks for creating this issue. I don’t think this is something that we have the capacity to implement right now, but we’d be happy to accept and work through contributions around this!
