Docs: Revamp extensions site

This pull request involves significant changes to the documentation and extensions deployment process, as well as updates to the build configuration and dependencies. The most important changes include removing the current extensions site and integrating it into the docusaurus site.

Changes:

• [x] Integrate extensions site directly into docusaurus
• [x] Fix reload or direct linking to extensions leading to 404s.
• [x] Update deployment workflow for new changes.
• [x] Add redirect to move users from the /v1/extensions linking to /extensions automatically.

To do:

• [ ] Update UI to desirable styling.
• [ ] Update tailwind integration site wide.
