[feature-request] Add latest version to available_images.md

Concise Description:

Unsure if this was intentional, but the latest version tag for general frameworks was removed in this change

Can we add these back to the available_images file?

Additional context

The reason we want this to know and be able to pin specific versions to our containers.

In fact, there is even instructions for how to do so in the available_images file but no versions are mentioned
