Dynamic defaults

The ability to rename the default collections/tables as well as columns or documents, either through environment variables or the UI.

Currently, migrating to Authorizer when you already have an existing platform is hard because of the current rigidity of the default configuration forcing you to rewrite huge portions of your own code. Making these defaults "dynamic" would solve the issue.
