Add metrics / Prometheus support

• Allow a higher degree of observability.
• Count event occurences, such as usage of endpoints, or which functions are called the most
• Different from Jaeger / Tracing, as this does not focus on spans - only events.
• We can re-use trace events, though, and count these.
