update Software kibana instructions to account for sidecar-logging

The current instructions for creating a kibana index assume users have sidecar-logging disabled - this update adds instructions for sidecar-logging users as well. Also removes one parenthetical that flows oddly with the new instructions and doesn't seem to be helpful or required.
