[docs] Add OKLCH palettes
We should document colors-oklch.min.css and gray-oklch.min.css for folks who want to use dynamic palettes.

They’re fantastic, especially the lightness and the chroma, which make maintaining accessibility so straightforward. Really well done, great job Adam!

We’ll see in the future how they scale. For now, I think the author has enough flexibility with relative colors, and they can always fall back to static hex if needed.
We could add a second palette later to support the main colors-oklch, but for now these should be more than enough.
We should also consider renaming the gray props in gray-oklch.min.css to --hdr-gray so they don’t conflict with the hex version, as mentioned in issue #388. Before adding them to the docs, this feels like the right moment to make that change.
