sam: platform.txt: sketch_flags, -DPLATFORM={version}

platform.txt:

• sketch_flags for use with ./platform.sketch.txt
• define -DPLATFORM= with platform {version}
• added -DARDUINO_ARCH= and -DARDUINO_BOARD=
