refactor: use a valid test email

Description

Change the email used in testing to a valid email. Currently we are using api_user. Will be changing this to api_user@api_user.com

A video or a GIF is preferred. when using Loom, don’t embed because it looks like it’s a GIF. instead, just link to the video
