Quality Assurance documentation not up to date

Describe the bug

https://github.com/anitab-org/documentation/blob/master/quality-assurance.md The document is not up to date, for example it does not include bridge-in-tech backend and web, AnitaB forms Backend, and Stem Diverse in the top projects sections which should be added. It also includes our archived projects in top section and setup instructions which should be removed.

Expected behavior

Include active projects and remove archived projects.
