Is it possible to change the colors used in JSX syntax highlighting?

I could not find anything obvious after scanning the various preferences pages. In particular the colors for prop names and values seemed to be fixed?

No.

Syntax coloring is managed with JSX TextMate grammar with https://github.com/eclipse/tm4e The only thing that you can do for the moment is to change the TextMate / Theme.
