Update pg_query to fix installation on Mac OS ARM

Hello :)

I had troubles installing pg_query on my Mac with M3 ARM cpu. Found out this closed issue:

Updated pg_query to 6.1

I hope this is fine, even if it's a major change. I'm still at the beginning of the book so I don't know it :)

@delphaber Great, thank you for submitting. I also have access to a newer Mac with an M4 I can try and reproduce this on. I will refresh my knowledge on how pg_query versions are linked up with Postgres versions.

Thanks @delphaber I agree this was helpful, and although it wasn't your PR directly, I've added an equivalent change and mentioned you. Thanks for your contribution to this. I'm continuing to upgrade dependencies to make sure everything is running ok at least on macOS.
