Expand signalstats details in QCTools examples

QCTools examples just leave the big ol lump of signalstats to be mysterious and undeciphered, would be good to break it down better for understanding

No (although @privatezero is great, thank you @privatezero), this is referring specifically to the large line in the QCTools examples -- it'd make for a very long recipe description!

I guess a long recipe should be more than a concatenation of short recipes.
