Same problem.
I tried to build bless from sources to workaround this and faced with missing gtk-sharp-2.0. It seems bless dev stack is outdated and Ubuntu authors couldn't just port it to 24.04
gtk dependencies for bless are lower than the gtk versions supported by ubuntu 24 (gtk3 minimum) trying to make it work you ll end up in dependency hell
What you might try is the snap package for bless. (Im no fan of snaps, typically remove it, but I really want bless hex editor, so... $sudo snap install bless-unofficial https://github.com/dafanasiev/bless-snap
