Add the ability to archive orders

Subject of the issue

We should add the ability to archive orders, so we can delete old products which are not sold anymore.

Your environment

• Version of Hyperion: latest main
• Operating system: debian

Steps to reproduce

Create products on the AMAP module. Create a delivery, buy the product, and close the delivery. Then you won't be able to delete the product

Expected behaviour

We should be able to archive old deliveries (remove them completely or keep only recipient and the total cost), so we can delete an old product.

Actual behaviour

We can't delete old products cause they are linked to existing old deliveries.
