Unlike the previous PR, this retains the filtering, we just pick one version per build.

This duplication is because of Universal versus arm64, right? We should probably show and support selecting the variants.

As far as I can read the code changes, this PR will only show one entry per Xcode version, but still won't allow to select which one to install from the CLI, "Apple silicon" or "Universal", @mattguk please kindly confirm.
