Spike to migrate to Cypress component test runner

🚀 Feature Proposal

Move to cypress component test runner.

Currently we're using cypress storybook which has been great to use storybook to write our test. As of React 18, the way they unmount is different so we've had to work around this issue with some cy.waits.
