I wanted to know if there is a project for archiving the wikis of subreddits, there are many that contain really valuable information

I'm not aware of such a project. Are they subject to the new generalised restrictions on API access and scraping? I'd start by adding a new section on the AT page: https://wiki.archiveteam.org/index.php/Reddit
