Allow infinispan client library version to be configurable/updateable

The script helpers/build/infinispan-client-setup.sh provides a way for users to download the infinispan client libraries into a container image based on the WebSphere Liberty images. It currently has a hard coded version of the client libraries with no easy way to update/configure the version. It would be better if the version was simpler to update/configure/override
