Add option in SimEng to export statistics in CSV/JSON/YAML file formats

Currently, the only way to gather statistics from a SimEng simulation is to parse the output from stdout. This can be a tedious process often requiring complex regexes and parsing patterns. As SimEng matures as a research tool it will be beneficial to have a feature which allows users to export simulation statistics in different file formats.
