Create multi-arch image for SoapUI Test Runner

Should ideally support

• amd64
• arm64

Motivation

new Mac's are no longer available in Intel models, and SoapUI MacOS users on apple silicon currently require use of Rosetta (Apple's Intel emulation layer)

Native ARM64 images would make this advantageous for local use on Apple Machines, and allow use of the SoapUI test runner in Cloud ARM64 machines
