✨ Admin portal - let me see how many times a prize has been claimed

Note: to be done after NDC Melbourne After events/conferences, I want to see how many people claimed a prize, so we can count how much merch we gave away.

1. Please add a way to see the count of claimed
2. Add a way to sort it by date too, so I can look for 1 specific conference

Acceptance Criteria In the admin portal, I can:

• See how much merch we gave away at a conference (over 1 week)
• See who has redeemed a Mi Band - and sort by name and time
• Same for any other prize
