The Italian translation has problems

The Italian translation has some problems, either as ... how can i say ... "choice of terms" and also in visualization of some charachters:

1. How can i force the English language?
2. I'd like to contribute to the Italian translation: i'm contributing to a pair of projects on Crowdin, but i'm totally unaware of how Github works. There's a "simple" way for me to revise the actual strings and send a file to someone else willing to commit the changes (or whatever is the right procedure for this)?
